Home made Pretzel Buns on the Joe



Today I was inspired by John M. Setzler, Jr over at Man Cave Meals in trying to make some Pretzel Buns on the BBQ after seeing the ones he made on his Facebook page and his blog. I just had to give them a try! Making these Pretzel buns is pretty easy and quick to make. I never seen some of these buns in our grocery stores. Let me tell you they make the perfect buns for burgers, sliders and pull pork sandwiches!!

John is very known in the BBQ community for his Backyard cooking skills and I have learn lots from his blog, forum and videos!

Well let's get cooking!

Ingredient for the Pretzel Dough

·       1 1/2 Cup Luke Warm Water
·       4 TBSP Melted Butter
·       1 TBSP White sugar
·       2 TSP Kosher Salt
·       2 1/4 TSP Active Yeast
·       4 1/2 Cup Flour



Ingredient for the Pretzel Dough Soak

·       10 Cup boiling water
·       2/3 Cup Baking Soda

Ingredients for the Egg Wash

·       1 Egg beaten
·       1 TBSP water

Direction

1.  In your mixer mixing bowl add the water, Melted Butter, Sugar, Salt, yeast and flour;


2.  Now mix at low speed with dough hook till the dough ball is form, then increase speed to medium for a couple of minutes;



3.  Remove Dough ball from mixing bowl and wipe the bowl down;

4.  Coat the bowl with Pam or vegetable oil;



5.  Place Dough ball in the bowl and turn the Dough Ball to ensure its lightly covered in oil;



6.  Cover the bowl and let the dough rise for approximately 1 hour till its twice its size;

7.  After the dough as risen take it out of the bowl and work it into a perfect ball then place on a lightly floored surface;

8.  Now cut the dough ball in six even pieces and shape each pieces into bun shapes then set aside and move to the next step.




Now it's time to make the Pretzel Dough Soak mixture which is pretty quick to make.


1.   In a pot bring 10 cup of water to a boil then remove from heat;

2.   It's now time to add the baking soda to the water;



3.   Place each dough ball in the water for 30 seconds a side then set aside;



4.   Place the dough ball aside on a piece of parchment paper and move on to the next step.



At this stage of the game you want to preheat your Kamdo Joe and Pizza stone to a Temperature of 450 degrees Fahrenheit.

It's now time to make our Egg Wash.

1.   Beat one egg and 1 TBSP of water in a small bowl;



2.   With a pastry brush the top of each Dough Ball with the egg wash;



3.   Sprinkle some Sea Salt or Kosher Salt on the top of each Dough Ball;

4.   Score a X on top of each Dough ball with a sharp knife.



It's now time to cook the pretzel buns. You want to place your buns on the pizza stone with a pizza peel. Then cook for approximately 10 to 15 minutes till they are golden and brown. It's also a good ideal in the middle of the cook time to turn the pizza stone 180 degrees to prevent hot spots.






You can also mixes some Parmesan cheese or BBQ rubs in the dough for added flavor to play with your taste buds!

With my Pretzel buns I decided to make burger's with them which was fabulous!!!

Here's another variation of the Dough recipe that I came across that is also pretty good and I thought I would also share it here!


Dough Ingredients:

·       1 cup milk
·       2 TBSP butter or margarine
·       2 TBSP brown sugar
·       1 envelope Fleischmann's RapidRise Yeast or 1 1/4 TSP active yeast
·       2 TBSP salt
·       3 cups all-purpose flour, or more as needed

Directions:

1.  Heat milk and butter until warm (100 degrees to 110 degrees F); the butter will not completely melt.

2.  Combine with un-dissolved yeast and brown sugar in a large mixer bowl.

3.  Add Salt and 2 cups flour and mix at low speed with dough hook till the dough ball is form and add more flour till no longer sticky, then increase speed to medium for a couple of minutes;
